Beef Enchilada Casserole

Instructions:

  1. Preheat the oven:
  • Preheat your oven to 350°F (175°C).
  1. Cook the beef:
  • In a large skillet over medium heat, add the ground beef and diced onion. Cook until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess fat.
  • Add the minced garlic and cook for 1 more minute.
  1. Season the beef:
  • Stir in the cumin, chili powder, salt, and pepper to the beef mixture. Mix well to combine.
  1. Add beans, corn, and sauce:
  • Stir in the black beans, corn, and 3/4 of the enchilada sauce. Let everything simmer for 3-4 minutes so the flavors blend.
  1. Assemble the casserole:
  • In a greased 9×13-inch baking dish, spread a thin layer of the remaining enchilada sauce on the bottom.
  • Add half of the tortilla strips evenly across the bottom. Top with half of the beef mixture, then sprinkle 1 cup of shredded cheese.
  • Repeat the layers: tortilla strips, beef mixture, and cheese, finishing with a layer of cheese on top.
  1. Bake:
  • Cover the casserole with foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  1. Serve:
  • Once the casserole is done, remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro.
  • Serve with sour cream, avocado slices, or salsa on the side, if desired.

Tips:

  • You can add other fillings such as bell peppers or jalapeños for extra flavor and heat.
  • If you prefer a softer texture, dip the tortilla strips in enchilada sauce before layering them.
