Make the Filling:
Blend together in a large mixing bowl the following ingredients: crushed nuts, puffed rice cereal, natural peanut butter, honey, and vanilla.
Utilize parts of the mixture that are around the size of a tablespoon and form them into oval or circular shapes. Put them on a baking sheet that has been lined with parchment paper.
To ensure that the formed mixture is solid, place it in the refrigerator for about thirty minutes.
Mix the milk chocolate chips and coconut oil together in a dish that can be heated in the microwave. When the chocolate is melted, heat it in increments of thirty seconds, stirring after each one, until it is completely smooth.
Each piece of cooled filling should be dipped into the melted chocolate until it is completely coated. After that, the excess chocolate should be let to drip onto the parchment paper before being returned to the filling.
Repeat with all of the pieces, and then place them in the refrigerator for about fifteen to twenty minutes, or until they have set.
