Instructions
- Preheat the oven:
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Prepare the meatballs:
- In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan, egg, minced garlic, parsley, salt, pepper, and oregano. Mix everything until well combined.
- Shape the mixture into small meatballs (about 1-2 inches in diameter) and set them aside.
- Prepare the potatoes:
- In a separate bowl, toss the cubed potatoes with olive oil, paprika, salt, and pepper. Spread the potatoes in a single layer on one side of the prepared baking sheet.
- Bake the potatoes and meatballs:
- Place the meatballs on the other side of the baking sheet, making sure they are spaced apart.
- Bake in the preheated oven for 20-25 minutes, or until the potatoes are crispy and the meatballs are fully cooked.
- Add the cheese:
- Once the meatballs and potatoes are cooked, remove the baking sheet from the oven. Sprinkle the shredded mozzarella and Parmesan cheese over the meatballs and potatoes.
- Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove from the oven and let cool for a couple of minutes. Garnish with fresh parsley or chives if desired, and serve hot.
