Slow Cooker Mediterranean Herb Parmesan Meatloaf

Instructions:

  1. Prepare the Meatloaf Mixture:
  • In a large bowl, combine the ground meat, breadcrumbs, Parmesan cheese, onion, garlic, egg, parsley, oregano, thyme, cumin, coriander, smoked paprika, salt, and pepper. Mix well until all ingredients are fully incorporated.
  • In a small bowl, whisk together the milk, tomato paste, and olive oil. Pour this mixture over the meatloaf mixture and combine thoroughly.

  • Shape the meat mixture into a loaf and place it in the bottom of your slow cooker.

  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the meatloaf is cooked through (internal temperature should reach 160°F or 70°C).
