Instructions:
- Prepare the potatoes:
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes clean and poke holes in them with a fork.
- Place them directly on the oven rack and bake for about 50-60 minutes, or until they are tender when pierced with a fork.
- Let them cool slightly.

- While the potatoes bake, heat a large skillet over medium heat and cook the ground beef until browned, breaking it into small crumbles. Drain excess fat if necessary.

- Scoop and mix the potato filling:

- Stir in half of the shredded cheese and the beef mixture.
- Stuff and bake the potatoes again:
- Preheat the oven to 375°F (190°C).
- Spoon the beef and potato mixture back into the potato skins, mounding them slightly.
- Top each potato with the remaining cheese.
- Place the stuffed potatoes on a baking sheet and bake for 15-20 minutes, or until the cheese is melted and the tops are golden.
- Garnish and serve:
- Remove from the oven and let cool for a few minutes. Garnish with chopped green onions if desired.
